A perennial plant that grows as a shrub. If cultivated from seed, seedlings are produced a year before planting. The edible flower buds (called capers) are used, which should be harvested whole, completely firm, and closed with a green color. Valued for its sour-spicy taste, used in culinary dishes. Harvest at the beginning of summer.
